Jalapeño Popper Pretzel Bites
- 1 can pickled jalapeño peppers, drained
- 3-5 ounces cubed cheese
- 1 (1 pound) ball fresh pizza dough
- Flour for dusting
- ¼ cup baking soda
- 1 egg, beaten with 2 tablespoons of water
- Coarse salt, for garnish
- 1 bottle BEST DAMN Cherry Cola
Pre-heat oven to 425°F/220°C
Slice the peppers into ¼ inch rounds and carefully remove the seeds. Set aside.
Cut cheese into small cubes that will fit into the pepper rings. Set aside.
4. FORM DOUGH
Take a small ball of dough (approximately 1 ounce) and press into a flat circle (like a tiny pizza).
5. PLACE PEPPERS
Place a pepper ring/cheese cube in the center of the dough and carefully wrap, tucking under to seal the edges. Place on a tray lined with parchment, carefully make a small cross hatch 'x' on the top.
6. BOIL WATER
Bring 5 cups of water to boil with the baking soda. Carefully boil the balls for 20-30 seconds until they float to the surface. Place the balls on a baking sheet and lightly brush with the egg wash. Sprinkle with coarse salt.
Bake for about 15 minutes or until golden brown.
